Antioxidant Activity of Chitosan with Propolis

Abstract
The samples used in this experiment each had concentration 100, 200, 400, 800, and 1000 ppm and the experiment was conducted to analyze antioxidant ability of propolis(Pp), chitosan(Cs), and Pp + Cs by measuring DPPH-radical scavenging activities and SOD-like activities. By using DPPH-radical scavenging activities method, we discovered that Pp, regardless of concentration, was 80 to 85 % and Cs had tendency to increase (22.2%) as the concentration went up. DPPH-radical scavenging activities seemed to increase more when Pp was added with Cs; this might have been attributed to the synergic action caused by two substances. SOD-like activities were higher when the samples with high concentrations were used; Pp had the highest activity, Cs had the average activity and C had the lowest activity. As the concentration of the solution (Pp and Cs) got higher, SOD-like activities augmented and as the ratio of Cs increased, SOD-like activities increased as well. As the result of this experiment, it is expected that Pp and Cs which are all natural, are going to be used as functional foods and cosmetic products.
